Almond Coconut Energy Balls

These energy balls are the perfect snack when you need a midday pick-me-up! Full of chocolate, coconut and almonds, just like your favorite Almond Joy candy



I have always been obsessed with energy balls, bars, and all sorts of sweet treats for mid-day snacks. These bars are perfect for pre-workout energy, or just a snack to get you through the day.

This recipe is super easy, takes 30 minutes total to make, and is really delicious. They are the perfect almond joy flavor, with a fun and healthy twist. It’s hard to stop after just one of these!



RECIPE:


Servings: 10-12 balls

Prep Time: 15 mins

Total Time: 30 mins


Ingredients:

  • 6 pitted dates (medjool or deglet noor)

  • 1/4 cup unsweetened shredded coconut

  • 1/8 cup chopped chocolate (I use a 90% cocoa chocolate bar)

  • 1/4 cup sliced almonds

  • 3/4 cup old fashioned oats

  • 3 tbsp coconut oil

  • 2 tbsp honey

Instructions:

  1. Prepare all ingredients, including chopping chocolate and slicing the dates to ensure all pits are removed

  2. Combine all dry ingredients in food processor and pulse until finely chopped

  3. Add in honey and coconut oil, adding coconut oil by tablespoon until consistency is moist and dewy

  4. Place mixture in freezer for 15 minutes to shape easier

  5. Remove from freezer, scoop a heaping spoonful and roll into balls by hand

  6. Store in the fridge in an airtight container
