Pear & Blue Cheese Salad

I'm always looking for different meals for lunch, that are quick and easy to make. Combining sweet & savory in this Pear & Blue Cheese salad is the perfect mid-day meal to keep you fueled for the second half of the day.

Servings: 2 large salads
Total Time: 30 minutes
Ingredients:
Salad:
2 cups chopped kale/lettuce (I used a mix of both)
1 can chick peas
1 tbsp olive oil
1/4 cup blue cheese
1 avocado
1/4 cup cranberries
Dressing:
3 tbsp avocado (or olive) oil
2 tbsp apple cider vinegar
1 tbsp dijon mustard
salt & pepper to taste
Instructions:
Preheat oven to 425 degrees F.
Rinse and drain chickpeas, drying while softly removing the peels. Prepare by tossing in oil, salt and pepper. Spread in single layer on a baking pan, and roast for ~25 minutes, tossing halfway through
While the chickpeas are roasting, prepare the salad dressing by combining all ingredients in a small bowl and stirring until well mixed. Season with salt and pepper to taste
Cut kale/lettuce into bite size pieces and massage in about half of the dressing (this will especially help the kale become more tender!). Separate into 2 large bowls
Prepare pear and avocado by slicing into smaller pieces
Arrange salads by layering pear, chick peas, avocado, blue cheese, and cranberries on top of the kale/lettuce mix.
Drizzle the remaining half of the dressing on top of salads & serve immediately
**If arranging ahead of time, leave all ingredients in separate containers and combine when ready to make the salads
