Easy Falafel Greek Bowl

Is anyone else super obsessed with Mediterranean/Greek meals? I think they are so easy, fresh, and quick to throw together. One of my favorite things is meals that are very versatile and you can throw anything in. These falafel bowls are definitely one of those meals - add in any sort of veggies, olives, etc. as you please!!
In terms of protein, I chose to use falafel since I had a box mix from Trader Joe's in my pantry. You could also use chicken, lamb, beef, or any meat of your choosing.

Servings: 4 bowls
Total Time: 45 minutes - 1 hour
Ingredients:
Bowls:
1.5 cups brown rice
romaine lettuce
1/2 diced cucumber
1 cup chopped grape tomatoes
falafel mix (I used Trader Joe's boxed mix)
olive oil
dill for topping
Tzatziki Sauce:
1 cup greek yogurt
juice of 1/2 fresh lemon
1/4 cup finely diced cucumber
1/2 tbsp. dill
1 clove garlic, minced
salt to taste
Instructions:
Cut cucumber, tomatoes and lettuce and divide into 4 large bowls
Prepare falafel according to box instructions
While falafel is baking, prepare brown rice by boiling 3 cups water and adding rice in. Cook for 25-35 minutes until all water is absorbed
While the falafel & brown rice are cooking, prepare tzatziki sauce. Combine all ingredients in a small bowl and mix until well combined. Season with salt to taste
Once falafel & rice are finished, divide into the 4 bowls and top with tzatiki sauce. Finish with fresh dill
