Caprese Pasta Salad

Caprese is the PERFECT flavor combination in my opinion. The smooth mozzarella, fresh basil and the zesty tomato blends together for a year-round fan favorite. I wanted to find a more filling, meal-worthy way to use this flavor and decided to transform it into a filling and hearty pasta salad (because who doesn't love pasta?). Find the recipe below:

Servings: 4

Total Time: 30 minutes


Ingredients:

  • 1 box gluten free pasta (I used Trader Joe's brown rice & quinoa spirals)

  • 1 ball of mozzarella

  • 2 heirloom tomatoes

  • handful of fresh basil

  • balsamic vinegar

Instructions:

  1. Boil water in a large pot & cook pasta according to bag instructions

  2. While pasta is cooking, dice mozzarella and tomatoes into bite size pieces

  3. Heat a small pan over medium heat and add in 1/4 cup balsamic vinegar. Heat until the vinegar has turned into a glaze/reduction. Be careful not to overcook and remove from heat immediately

  4. Finely chop basil and set aside

  5. Once pasta is finished, combine into large bowl with mozzarella, tomatoes, and about 3/4 of fresh basil.

  6. Divide into bowls and drizzle with balsamic reduction. Sprinkle with leftover basil and season with salt and pepper to taste
